Yes, our flours can be combined. You may see a slight variation of colour depending on the ratio of Brown and Ivory Teff flour used.

Our All-purpose Berhan Teff flour is milled to a finer grade for use in a variety of baked goods, from breads to pastries. Our Injera-grade Berhan Teff flour is milled faster, coarser, and at higher temperatures, to enhance the injera fermentation and baking process, which is more ideal for making the staple bread of the Ethiopian and Eritrean diets.

The main difference between Brown and Ivory Teff flour is their colour. Both Brown and Ivory Teff have the same nutritional value, and Brown Teff flour lends a slightly nuttier taste and pairs well with richer dishes, compared to the milder taste of Ivory Teff flour.

A general rule of thumb when working with Berhan Teff flour is to substitute ¼ of the flour called for in any baking recipe (gluten-free or not) with our Berhan Teff flour.
