Perfect Tested Gluten-free Injeras for us with Celiac Disease

Injera could be life-changing for us with celiac.

We can’t eat bread or anything made with wheat.

Teff is safe for us and injera traditionally is made by adding just water.

Unfortunately, most people add wheat.

It’s really hard to consistently make with 100% teff flour.

I’ve been systematically developing a trustworthy recipe for us.

This my first effort with Berhan teff flour.

It worked really well.

My injeras tested as gluten free, to the same strict level as the Berhan flour.
